BANANA, BLUEBERRY MUFFINS OR
MINI LOAVES
 
1 cup sugar
1/2 cup vegetable oil or soft butter
1 cup mashed bananas
1/2 cup plain yogurt
1 tsp. vanilla
2 eggs
2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 cup fresh or frozen blueberries

Preheat oven to 350°F.

Beat together sugar and oil or butter. Stir in blueberries, yogurt, vanilla and eggs. Add dry ingredients. Stir by hand with a spatula or wooden spoon. Fill greased pan/tins 2/3 full.

Bake in preheated oven for about 25-40 minutes (depends on which pans are used) or until a wooden pick inserted in center comes out clean.

Makes 12 muffins.
