BEST EVER CARROT CAKE 
3 eggs
1 1/2 c. sugar
1 1/8 c. oil
1 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. cinnamon
1 tsp. salt
2 sm. jars strained baby food carrots
1 (#2) can crushed pineapple, drained
3/4 c. raisins, sprinkled with a little flour
1/2 c. walnuts, chopped
1 tsp. vanilla

Combine eggs, sugar and oil and beat well. Sift together flour, baking soda, cinnamon and salt and add to egg mixture. Add all remaining ingredients and mix well. Pour into 9 x 13 inch pan and bake at 350 degrees. When cool, spread with icing or serve with Cool Whip. Can also eat cake plain or sprinkled with 10X sugar.

ICING:

1 (8 oz.) pkg. cream cheese, softened
2 c. 10X sugar
1 tsp. vanilla
2 tbsp. butter, softened
Dash of salt

Cream together.
