PUMPKIN CAKE ROLL 
3 eggs
1 c. sugar
2/3 c. pumpkin (1 sm. can will make about 3 of these)
1 tsp. baking soda
1/2 tsp. cinnamon
3/4 c. flour

Mix together all ingredients for cake. Grease and flour cookie sheet. Place a piece of wax paper on cookie sheet and spray with Pam. Make sure sides of cookie sheet are greased also. Bake at 375 degrees for 15 minutes. When baked, roll into a roll as you would for a jelly roll. Do this as soon as it comes out of the oven. Roll cake with the wax paper still on bottom. Let this completely cool rolled up.

FILLING:

8 oz. cream cheese, softened
1 c. powdered sugar
3/4 tsp. vanilla
2 tbsp. butter, softened

Mix these ingredients together. Unroll cooled cake and spread filling on cake. If you wish, nuts can be sprinkled on top of filling. Roll cake back into roll removing wax paper as you roll. Sprinkle with powdered sugar.
