MOM'S IRISH BREAD | |
3 c. flour 3 tsp. baking powder 1/4 tsp. salt 1/2 c. sugar 2 tbsp. softened butter 1 c. raisins or currants 1 tbsp. caraway seeds 1 beaten egg 1 1/4 c. milk Buttermilk may be substituted for regular milk, but decrease baking powder by 1/2 teaspoon and add 1/2 teaspoon baking soda. Sift dry ingredients in large bowl and lightly work in butter with fingers. Then add raisins and caraway seeds and make sure raisins are evenly distributed. Combine eggs and milk in small bowl and stir into flour mixture until all flour is moistened. Bake for 50 minutes at 375 degrees in 9x5 inch greased loaf pan. Remove from pan and cool on rack. |
