SWEET CARROT BREAD 
1 1/2 c. sugar 1 pkg. (8 oz.) cream cheese, softened
2 eggs, slightly beaten
2 tbsp. milk
1 tsp. vanilla
2 c. unsifted all-purpose flour
1 tbsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
2 c. carrots, shredded
1/2 c. raisins

Beat sugar and cream cheese until smooth. Add eggs, milk, and vanilla; blend thoroughly. Combine flour, baking powder, cinnamon, and soda; add to cream cheese mixture. Stir in carrots and raisins. Pour in greased 9 x 5 x 3 inch loaf pan. Preheat gas oven to 350 degrees. Bake one hour or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool thoroughly on wire rack. Makes 1 loaf.
