SWEET CARROTS 
1 lb. carrots (6-7), peeled
2-3 tbsp. butter
1 tsp. basil
Salt and pepper, to taste
2 tbsp. maple syrup

Cut carrots into 1/4 inch rounds. Place carrots in earthenware casserole with cover. Dot with butter - sprinkle with basil - salt and pepper - drizzle with maple syrup. Bake at 375 degrees for 1 hour - stir occasionally. Serves 8.
