SWEET CARROT FRITTERS 
2 c. flour
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 eggs
1/3 c. sugar or honey
1/3 c. milk
1/2 tsp. vanilla
2 c. shredded carrots
Oil or shortening for deep frying
Powdered sugar

Sift together the flour, baking powder, salt, cinnamon, and nutmeg. Beat the eggs, then first add the sugar or honey, followed by the milk and vanilla. Gradually beat in the flour mixture, and stir in the carrots.

Heat the oil or shortening and drop in the batter by heaping tablespoonfuls, turning to brown on all sides. Drain before dusting with powdered sugar. Makes about 20 fritters.
