PINEAPPLE UPSIDE DOWN CAKE 
Melt 1/4 pound butter in heavy 10" skillet. Add 1 cup brown sugar to melted butter. Arrange drained pineapple slices to above mixture.

BATTER:

3 eggs
1 c. sugar
5 tbsp. pineapple juice
1 c. flour
1 tsp. baking powder

Beat eggs; add remaining ingredients. Beat 2 minutes until well mixed. Add the batter to first mixture in skillet. Bake at 350 degrees for 40 to 50 minutes. Immediately turn upside down on serving plate. Leave pan over cake a few minutes before removing.
