BBQ SHRIMP 
Lg. shrimp, deveined & shelled
Equal amt. of partially cooked bacon strips

Cut shrimp down back, stuff with tiny slice of Mozzarella. Wrap bacon around stuffed shrimp. Secure with toothpicks. Place on skewers (wooden bamboo skewers need to be soaked in water for at least 1 hour before putting shrimp on). Brush on favorite BBQ sauce and barbecue for approximately 3 to 5 minutes on each side until done, adding barbecue sauce when needed. Serve over rice or alone.
