POTATO HAM BOATS 
4 lg. potatoes
1/4 c. milk (could use nonfat milk)
2 tbsp. butter
1 egg, beaten
1/4 tsp. salt
1/8 tsp. pepper
1 to 1 1/2 c. diced cooked ham
1 c. shredded Cheddar cheese

Scrub potatoes, prick skin and bake in 400 degree oven 50 to 60 minutes (or microwave on high 15 minutes) or until tender. Cut potatoes in half lengthwise, leaving 1/4 inch on all sides.

Scoop out pulp and mash with milk, egg, butter, salt and pepper and ham and 3/4 cup cheese. Spoon mixture into potato skins and bake at 375 degrees for 20 minutes or until lightly browned.

Top with remaining cheese and return to oven and heat 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
