CHEESE TOPPED BUBBLE AND SQUEAK 
1 1/2 lb. potatoes
1/3 cup milk
2 tbsp. butter
1 lb. green cabbage, washed and chopped
1 onion, peeled and finely chopped
salt and freshly ground black pepper, to taste
3 oz. cheddar cheese, grated

Peel potatoes. Cook, drain and mash with milk and butter. Plunge cabbage into boiling water for 5 to 10 minutes. Drain and chop fine. Combine with potatoes and onion. Add salt and pepper, to taste. Top with cheese and bake at 400°F for 30 to 40 minutes.
