TURKEY MANICOTTI 
8 manicotti shells
1 (15 1/2 oz.) jar meatless sauce
1 c. ricotta cheese
1/4 c. snipped parsley
1 lb. ground raw turkey
1 beaten egg
1 c. shredded mozzarella cheese
1/4 c. grated Parmesan cheese

Cook manicotti in boiling water about 18 minutes or until tender, but still firm; drain well. In a large skillet cook turkey until no longer pink; drain. Stir in sauce. Heat through.

Mix together egg, ricotta, mozzarella, parsley and Parmesan. Stuff cheese mixture into shells. Spoon 1/3 of the sauce mixture into a 12 x 7 1/2 x 2 inch baking dish. Place shells on top. Top with remaining sauce mixture, covering shells. Bake, covered in a 350 degree oven for 25-30 minutes or until hot.
