MINESTRONE SOUP 
1 tbsp. olive oil
1 sm. onion, chopped
1 c. carrot, sliced
1 c. celery, sliced
1 c. zucchini, sliced
1/2 c. yellow pepper, diced
1 (3 3/4 oz.) can beef broth
14 oz. can whole peeled tomatoes, chopped with juice
1 c. med. pasta shells, cooked
10 oz. can whole white kidney beans
1/2 tsp. basil

In 2-quart microwave casserole, mix oil and vegetables. Cover with plastic and microwave on high for 5 minutes. Add remaining ingredients and microwave on high for 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
