PINEAPPLE ZUCCHINI CAKE 
3 beaten eggs
2 c. sugar
2 tbsp. vanilla
1 c. oil
2 c. zucchini, peeled, chopped and drained
3 c. flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda
1 c. crushed pineapple, drained
1/2 c. raisins
1 c. chopped nuts

Beat eggs. Add sugar, vanilla and oil. Add zucchini, then the flour, baking powder, salt and soda. Stir in pineapple, raisins and nuts. Bake 1 hour at 325 degrees in tube pan or until toothpick inserted comes out clean.

Frost with cream cheese frosting.
