BOILED FRUIT CAKE 
1 c. granulated sugar
1 c. raisins
1/2 c. dates, cut fine
1/2 c. shortening
1 tsp. baking soda
1 c. boiling water
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt

Combine all of the above ingredients in a saucepan. Bring to a boil and boil for a couple of minutes. Remove from stove and cool to room temperature. Then stir in 2 cups of flour and 1 cup of nuts.

Pour into greased and floured tube pan or loaf pan and bake for 1 hour at 325 degrees, or until it tests done.

Note: The cholesterol count for this recipe can be made even lower by substituting vegetable oil for solid shortening. You can also add chopped candied fruit to this recipe.
