STUFFED ARTICHOKES | |
2 artichokes 1 c. bread crumbs 3/4 c. Romano cheese (3 oz. jar) 1 onion 1 stalk of celery 2 cloves garlic 1 tsp. salt 1/2 tsp. pepper 1/2 c. olive oil 1/2 lb. ground meat Cut artichokes off at the stem so they will sit flat in pot. With a scissors cut the points off the leaves. Open the leaves as much as you can and wash and drain well. Use your hands and mix all other ingredients together and stuff into artichokes. Put in a large pot with 1 inch of water. Cover and simmer 2 1/2 hours. You will need to add water every so often. |
