CREAMY QUICK FUDGE | |
1/2 lb. Velveeta (Kraft) cheese, 8 oz. 1/2 lb. butter (2 sticks) 2 lbs. confectioners' sugar 1/2 c. cocoa 1/2 tsp. salt 2 tsp. vanilla Nutmeats to taste (1/2 c. pecans or walnuts) Melt together in top of double boiler: Velveeta cheese, butter. Stir frequently as it melts. Sift together in regular flour sifter, confectioners' sugar, cocoa, salt. Add dry ingredients to melted cheese and butter. Add 2 tsp. vanilla, nutmeats (I do not put nutmeats in fudge, but put pecan halves on top of mixture as it cuts easier this way.) Blend together--will make a big ball. Grease 8x8 inch pan. Add fudge and level off before laying on nutmeats. OR using waxed paper, roll into a log, seal with foil and freeze. 8x8 inch pan can be refrigerated for a month if kept sealed with lid or foil. Keep reasonably cool at all times when ready to serve, cut into squares. Makes 3 1/2 lbs. candy. |
