EGGPLANT PARMIGIANA 
1 eggplant, cut in 1/2" slices
1/4 c. mayonnaise
8 oz. sliced Mozzarella
1/2 c. bread crumbs
3/4 c. grated cheese
Tomato sauce

On wax paper, put bread crumbs and grated cheese. Spread both sides of eggplant slices with mayonnaise, then dip both sides into bread crumbs. Place on ungreased baking sheet and bake at 425 degrees for 15 minutes. Turn once, slices will brown slightly. In oven proof bowl, layer eggplant slices, Mozzarella cheese and sauce alternately. Bake at 375 degrees for 15 to 20 minutes.
