POTATO PANCAKES 
2 eggs
2 onions, sliced
1 tsp. salt
2 tbsp. flour
1/4 tsp. baking powder
3 c. cut up peeled potatoes

Using blender, set control on grate. Place first 5 ingredients in blender jar. Add 1/2 cup of the potatoes. Turn blender on for 1 to 2 minutes. Set blender control to chop. Add remaining potatoes, a few at a time, and blend well until mixture is no longer lumpy. Batter should be thick; if it is watery, add a bit more flour. Fry pancakes in hot oil until golden brown. Drain on paper towels, then serve with pancake syrup or hot applesauce.
