MARINATED SALMON AND ONIONS 
1 can red Sockeye salmon
1 lg. onion, sliced
Salt & pepper to taste
1/4-1/2 c. vinegar (or to taste)

Combine ingredients, separating onion slices and marinate at least 1 hour covered in the refrigerator. Serve cold but with hot, buttery mashed potatoes!
