MARINATED PEPPERS AND ONION 
1 med. green pepper
1 med. red pepper
1/2 med. white onion
1/2 med. red onion
1 lg. tomato
1 1/2 tbsp. olive oil
1 1/2 tbsp. fresh lemon juice
1 1/2 tbsp. fresh lime juice
1/2 tsp. salt
3/4 tsp. black pepper
1/2 tsp. Tabasco sauce

Cut peppers in half, remove seeds and cut crosswise into 1/4 inch rings. Cut onions in half, then into 1/4 inch rings. Coarsely chop tomato.

In a covered jar, combine olive oil, lemon juice, lime juice, salt, pepper and Tabasco. Pour over vegetables and toss. Chill 2-3 hours. Makes 4 servings.
