CHOW MEIN 
1/4 c. vegetable oil
1 tsp. salt, (optional)
1/4 tsp. black pepper
1 c. celery, diced
1 (1 lb.) can bean sprouts, drained
1 (8 oz.) can water chestnuts, sliced & drained
1 (8 oz.) can bamboo shoots, drained
2 1/2 tsp. cornstarch
1/4 c. water
1/3 c. soy sauce, or low salt soy sauce
2 c. cooked chicken, turkey, pork or veal, diced
2 tsp. sugar, (optional)
2 c. broth or water
Chow mein noodles or cooked rice

Heat oil, salt, and pepper in pan. Add celery, bean sprouts, water chestnuts, bamboo shoots and sugar. Stir in broth. Cook approximately 1 minute. Mix cornstarch, water and soy sauce. Add to vegetable mixture. Stir until mixture thickens. Add meat and heat through. Serve over hot chow mein noodles or rice. Serves 4.
