ONION PIE 
1 c. saltine crackers, crushed
1/4 c. butter, melted
2 Vidalia sweet onions, thinly sliced
2 tbsp. butter, melted
3/4 c. milk
2 eggs, slightly beaten
1/4 tsp. salt
1/4 c. mild Cheddar cheese, grated
Paprika

Mix cracker crumbs with 1/4 cup butter and press in a 9 inch pie plate. Cook onions in the butter, stirring to separate onions. Cook until tender. Place in crumb shell. Combine milk, eggs, salt, pepper, then pour over onions. Sprinkle cheese and paprika on top and bake at 350 degrees for 20-30 minutes.
