APPLES IN BLANKETS 
1 lb. apples, peeled & cored, sliced into 3/8" rings
2 eggs
1/3 c. sugar
Dash salt
1 1/4 c. flour
1/3 c. dairy sour cream
1/4 c. buttermilk or "soured" milk
Deep frying shortening
Confectioners' sugar
Cinnamon or nutmeg (opt.)

Beat eggs and sugar until thick and foamy. Add salt. Beat in small amounts of flour alternately with sour cream and buttermilk. Beat until well mixed. Coat apples with this batter. Fry in oil until golden brown. Drain on paper towels, coat with confectionery sugar. If desired, sprinkle with the cinnamon or nutmeg. Enough batter to coat about 14 apples.
