COWPOKE CASSOLETTE (UPDATED) 
This simple mild chili dish is a variation on the old Campbell's soup recipe from the '60s. It has been a favorite in our family for years and also makes great camping food in a Dutch oven. Try it for your next scout meeting or school pot luck!

1 lb. ground turkey breakfast sausage
1 medium onion, chopped
1 tsp. bacon fat
1 (15 oz.) can medium heat chili beans
1 (15 oz.) can baked beans (any kind you like)
dash of hot sauce

In a large saucepan, fry the turkey breakfast sausage in the bacon fat over medium heat until just cooked through and all the water has evaporated.

Add the small chopped onion and fry for 5 more minutes until the onion and edges of the sausage crumbles begin to brown.

Add remaining ingredients and simmer for 10 minutes or until thoroughly heated through and then pour into a soup tureen or serving bowl.

Top with shredded cheddar cheese, dairy sour cream and Fritos corn chips - Awesome!
