OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal
1/4 c. brown sugar
1 tbsp. baking powder
3/4 c. skim milk
1/2 c. egg substitute
1/4 c. molasses
2 tbsp. oil
1 tsp. cinnamon
1/4 c. nut (optional)
1/4 c. raisins (optional)

Heat oven to 425 degrees. Spray bottoms and sides of 12 medium size muffin tins. Combine dry ingredients. Add milk and egg. Substitute honey and oil. Mix just until dry ingredients are moistened. Mix in nuts and raisins. Bake 15 to 27 minutes.
