APPLE-LEMON CHESS PIE 
1 unbaked 9-inch pastry shell
1 c. sugar
1/2 tsp. salt
1/2 tsp. grated lemon rind
4 eggs, beaten
3 tbsp. lemon juice
1/4 c. butter, melted
1 c. unsweetened applesauce

Combine sugar, salt, and lemon rind; set aside. Combine eggs, lemon juice, butter and applesauce; add dry ingredients and beat with an electric mixer until mixture is blended. Pour into unbaked pastry shell. Bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees; bake an additional 15 minutes or until set. Cool on wire rack.
