FRESH APPLE CAKE WITH LEMON
SAUCE
 
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 eggs, well beaten
2 c. sugar
1/2 c. salad oil
2 tsp. vanilla
4 c. diced apples
1 c. walnuts (optional)

Sift flour, soda, cinnamon and salt together. Beat eggs with sugar with electric mixer until creamy; add oil gradually. Add vanilla and nuts. Spread in greased 9 x 12 x 2 inch pan. Bake in preheated 350 degree oven for about 45 minutes. Serve with Lemon Sauce.

Lemon Sauce: Mix 1 cup water with 1/2 cup sugar, and 1/4 cup butter. Bring to a boil and add cornstarch, a little at a time, to thicken about 2 tablespoons. Add 1 tablespoon lemon juice or more, to suit your taste.
