PINEAPPLE COFFEE CAKE 
2 c. flour, sifted
3 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
1/3 c. shortening
1 egg, beaten
1 c. milk
4 slices pineapple

Sift flour, baking powder, salt and sugar together. Cut shortening into dry ingredients until mixture is dry and crumbly. Blend eggs and milk. Add liquid to dry ingredients and mix until blended. Place in greased 8" square pan or deep round pan. Cut pineapple slices into halves. Mix 1/2 cup flour, 1/3 cup brown sugar, 1/4 teaspoon cinnamon and 1/4 cup melted and cooled butter and sprinkle over top of batter. Bake at 375 degrees for 45 minutes.

TOPPING:

1/2 c. flour
1/3 c. brown sugar
1/4 tsp. cinnamon
1/4 c. butter, melted and cooled
