BLUEBERRY COFFEE CAKE | |
1/2 c. shortening 1 1/2 c. white sugar 3 or 4 eggs 1 c. milk 1/2 tsp. salt 3 c. flour 3 tsp. baking powder 1 c. blueberries Combine all dry ingredients. Mix in shortening like for pastry. Add eggs and milk. Stir only to moisten. TOPPING: 2 tbsp. butter 2 tbsp. butter 1 1/2 c. brown sugar 4 tsp. cinnamon 4 tbsp. flour Melt butter and butter. Add remaining ingredients. Put over batter in 9 x 13 pan. Nuts are optional. Bake 30-35 minutes at 325 degrees. |
