HEAVENLY CHEESE CAKE 
GRAHAM CRACKER CRUST:

1 stack (from 3 stack box) graham crackers
2 tbsp. softened butter
1/4 c. sugar

Crush crackers, mix all ingredients. Put in spring form pan, pressing down firmly and around sides about 1/2 inch. Refrigerate.

CAKE:

1 c. sugar
2 (8 oz.) pkgs. cream cheese
5 eggs
2 tbsp. fresh lemon juice
1 tsp. vanilla
1 pt. sour cream

In large bowl, at medium speed, cream softened cream cheese, egg yolks, lemon juice, vanilla and sugar. Beat until smooth. Add sour cream and continue beating until well blended. Beat egg whites stiff and fold into mixture. Pour into crust.

Bake 1 hour at 350 degrees shut off oven and leave cake in for another hour WITHOUT OPENING DOOR. Remove and cook on rack for 1 hour. As soon as cake is removed from oven go around edge of pan with a knife to prevent cracking.
