HASH BROWN POTATO CASSEROLE 
2 lb. frozen hash brown potatoes, thawed
1/2 c. melted butter
1/4 tsp. pepper
1 tsp. salt
1/4 c. chopped onion
1 pt. sour cream
1 can cream of chicken soup
2 c. shredded cheddar cheese

Preheat oven to 350 degrees. Mix all ingredients in a large bowl, stirring well. Pour into greased casserole dish. Bake 45 minutes. Yields 10 servings.

I made this and just added everything at once as the directions say - in fact - it works better and tastes better to melt the butter and saute the onions in the butter, before adding to the mixture. Also - two cans of soup are better than one - it makes the casserole more moist.
