LOVELY LEMON CHEESECAKE 
A delicious way to serve a dessert that is right for all the family.

1 whole graham cracker section, crushed
1 (4 oz.) pkg. lemon flavor sugar free gelatin
2/3 c. boiling water
1 c. Light 'N Lively lowfat cottage cheese
1 (8 oz.) pkg. light cream cheese
2 c. thawed lite whipped topping
Reduced calorie cherry pie filling

Spray 8" or 9" springform pan with non stick cooking spray. A pie plate can be used if no springform pan available. Line bottom and sides with cracker crumbs. Completely dissolve gelatin in boiling water, pour into blender or food processor. Add cottage cheese and cream cheese. Blend at medium speed until mixture is completely smooth. Pour into large bowl and gently stir in the whipped topping. Pour into prepared pan. Smooth top. Chill completely.

When ready to serve, remove side of pan if using a springform. Top with pie filling. Any fresh fruit makes this an unusually delicious dessert (strawberries, ripe peaches, etc.). Nutrition information per serving: 360 calories, 7 g fat, 59 mg cholesterol, 690 mg sodium.
