LEMON POPPY SEED BREAD 
1 pkg. lemon instant pudding mix
1 c. water
1/2 c. vegetable oil
4 eggs
2 tbsp. poppy seed
1 tsp. lemon extract

1. Put cake mix, pudding mix, water, vegetable oil, eggs, poppy seed and lemon extract in large mixing bowl.

2. Beat 2 minutes at medium speed with an electric mixer or if by hand, beat vigorously 300 strokes.

3. Pour into 2 greased and waxed paper or parchment lined 9x5 inch baking pans.

4. Bake in preheated 350 degree oven for 40-50 minutes. Remove from pan and cool on rack.

Makes 2 loaves.
