BANANA MUFFINS 
1 c. all-purpose flour
1 tbsp. baking powder
1/4 c. sugar or 6 pkg. Equal
1/2 tsp. salt (optional)
1/4 tsp. cinnamon
1/4 tsp. nutmeg
2 c. Bran Flakes
2/3 c. low fat milk
2/3 c. mashed banana
2 egg whites
1/4 c. butter, melted
1/2 c. raisins or dates

1. Sift together flour, baking powder, sugar, salt and spices.

2. Stir together Bran, milk and bananas in mixing bowl. Let stand 1-2 minutes or until Bran is softened.

3. Beat egg whites until foamy.

4. Add egg whites and melted butter to cereal. Mix. Beat well.

5. Add flour mixture; stir in raisins and dates, stirring only until combined.

6. Divide batter evenly into 12 greased 2 1/2 inch muffin cups.

7. Bake at 400 degrees for about 25 minutes or until lightly brown. Yield 12 muffins.
