POPCORN LOGS
4 to 5 c. popcorn (ready to eat)
3 to 4 c. creamy peanut butter
1/4 c. honey
1 c. shredded coconut
Small piece of butter

Pour popcorn into bowl. Add peanut butter. Add honey. Rub the butter on the palms of your hands. Using large spoon and your hands, mix popcorn, peanut butter and honey together. As you mix them together, start shaping the mixture into a log about 6" long and 3" wide. Sprinkle shredded coconut on the log as you keep shaping it. Turn the log onto waxed paper. Test to see if popcorn log will hold together. When it is solid enough to hold together, roll it up in the wax paper. Twist the ends of the paper together to close it. Place wrapped log in refrigerator or cold window sill for 2 hours. When the log is chilled, slice into 1/2" rounds. Serve and eat.
