5 egg yolks 1/2 tsp. salt 3 tbsp. sugar 5 or more tbsp. sour cream 2 1/2 c. cake flour 1 tbsp. brandy or cognac Add salt to eggs and beat until thick, add sugar, brandy and continue to beat. Add sour cream and flour alternately, mixing well after each addition. Knead on floured board for five minutes. Roll out 1/16" thick. Cut into diamonds 2"x4". Make small lengthwise slit down center of each. Pull 2 opposite corners through slit. Heat oil 2 " deep. Fry few at a time for 2 minutes or until light brown. Drain on brown paper and sprinkle with confectioners' sugar. |
