POPPY SEED MUFFINS 
2 1/2 c. sugar
2/3 c. vegetable oil
3 eggs
1 1/2 c. milk
2 tsp. almond flavoring
2 to 3 drops yellow food coloring
2 tsp. vanilla
3 c. flour
2 tsp. baking powder
1 1/2 tsp. salt
1 tbsp. poppy seed

Mix all ingredients together for 2 minutes. Pour into paper-lined muffin pans about 2/3 full. Bake 20 to 25 minutes. Makes 2 dozen.
