2 lbs. pork loins or chicken, beef 2 lg. onions 1 bell pepper 2 lg. baking potatoes 2 fresh tomatoes Add salt & pepper to taste Spray frying pan with non-stick oil. Cut pork up into strips about 4 inches long. Add salt and pepper, place meat (of your choice) in hot frying pan; brown all pieces. Add onion, bell pepper and tomatoes; cover and cook on low for 1 hour. Add potatoes and cook until potatoes are cooked. Serve with rice. |
