MOTHER'S ABLESKIVER (APPLE TREAT) | |
3 c. flour 6 tsp. baking powder 6 tbsp. sugar 1 1/2 tsp. salt 6 eggs, separated 4 tbsp. melted butter Milk (enough to make thin dough) Nutmeg or cinnamon, to taste Whisk together ingredients in the order listed. Mix only until combined. Brush an ableskiver pan with vegetable oil or melted butter. Fill the individual cups in the hot pan 2/3 full. Using the tip of a knife or bamboo skewer, turn each ableskiver over when bottom has set and bake the other side. Cook until centers are done (a skewer inserted in center will come out clean). Sprinkle lightly with nutmeg and cinnamon. Serve hot with melted butter and jam or syrup. Makes 24 ableskivers.
