ZUCCHINI BREAD 
3 eggs
2 1/2 c. sugar
1 c. oil
3 c. shredded zucchini
1 tsp. almond or vanilla extract
3 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1 1/2 tsp. baking powder
1 c. raisins
1 c. chopped walnuts

Beat eggs until fluffy. Add sugar and oil. Fold in zucchini and extract. In separate bowl sift flour, cinnamon, baking soda, baking powder together. Add raisins and walnuts. Combine wet and dry ingredients together. Grease 2 bread pans or one angel food pan. Pour mixture into pan and bake at 350 degrees for 1 hour or until done.
