"ALLISON'S SOUP" (Vegetable Beef
Soup)
 
1 beef soup bone with meat
1 tbsp. oil
4 c. water
1 lg. onion, chopped
1 c. celery, cut up
1/2 head cabbage, chopped
1 can (1 lb.) tomatoes
3/4 lg. bag frozen mixed vegetables
3 sprigs parsley
1 tbsp. salt
1/2 bay leaf, crumbled
3 peppercorns
1/4 tsp. marjoram
1/4 tsp. thyme

Cut meat off bone into small pieces. Brown in hot oil. Add water and bone. Simmer covered 1 1/2 to 2 hours. Remove bone and skim fat from the top of the soup. Add all vegetables, salt, bay leaf and peppercorns, marjoram and thyme. Cook until the vegetables are tender, about 1 hour.
