BEAUFORT STEW | |
1 bay leaf 1 lg. onion, chopped 1 lg. bell pepper, chopped 3 celery ribs, chopped 2 tsp. seafood seasoning Salt & pepper Polish sausage, cut into 1 1/2 inch links Corn on the cob, broken in half Red skin potatoes Raw unpeeled shrimp Put bay leaf, onion, pepper and celery into stew pot, and add enough water to cover. Add seafood seasoning and salt and pepper to taste. Boil 10 to 15 minutes. Add Polish sausage pieces and boil 10 minutes. Add potatoes and boil 10 minutes; add corn and boil 5 to 10 minutes; add shrimp and boil 3 minutes. Remove from heat and let stand 5 minutes. Drain in colander. Serve with basic cocktail sauce for shrimp. Serves from 5 people on up. Allow at least 1/2 pound of shrimp, one ear of corn and 6 inches of sausage per person, plus potatoes. This is great! |
