CHICKEN BREASTS - CORDON BLEU 
1 to 2 lbs. boneless chicken breasts, rinse, trim, and pound
Swiss cheese
Ham slices
2 eggs plus 1/2 c. milk, combined
3 c. bread crumbs

On pounded chicken, place a slice of cheese and a piece of ham. Roll it up. Dip this into egg-milk mixture, then into bread crumbs. Cover whole piece. Dip in egg-milk mixture and bread crumbs again. Place coated chicken into fry pan which has cooking oil on the bottom. Fry quickly to brown. Remove when browned evenly. Place in 13 x 9 inch pan and bake at 350 degrees for 25 minutes. Add cheese sauce on top last.

CHEESE SAUCE:

2 tbsp. butter
2 tbsp. flour
1 c. milk
4 to 5 slices favorite cheese
1 tsp. Parmesan cheese

Combine all in saucepan over medium heat until thick.
