KAREI NO NITSUKE 
2 lg. flatfish (10 oz. each)
2 c. water
1/4 tsp. salt
2 tbsp. mirin
1 tbsp. ginger root, minced
1/2 c. soy sauce
3 tbsp. sugar

Score each fish and cut in halves crosswise, set aside. Boil water in large kettle and stir in soy sauce, salt, sugar and mirin. Add fish and ginger and cook with cover over medium-low heat for 10 minutes. Turn over fish and cook another 10 minutes or until done. Serve hot or cool.
