CHEESE AND TURKEY TORTILLAS | |
1 1/2 c. jack cheese, grated 1 med. onion, chopped 1 clove garlic, minced 2 tbsp. butter 1 lb. can tomatoes 3/4 tsp. oregano 1/2 tsp. salt 1/4 tsp. thyme 1/8 tsp. pepper 2 oz. can mushrooms 1 1/2 tsp. flour 1/2 c. sliced ripe olives 1 1/2 c. leftover turkey or chicken 8 or more flour or corn tortillas Saute onion and garlic in butter. Add tomatoes, salt and spices; bring to boil and simmer about 15 minutes. Blend liquid from mushrooms with flour and stir into tomato mixture. Add onions and chicken or turkey and stir and cook until thickened. Spread some of the tomato and meat mixture into tortilla. Put a little cheese on and roll up. Place in greased pan with seam side down. Continue until tortillas are used up. Can sprinkle any sauce and cheese on top. Run under broiler until cheese melts or bake in oven just enough to warm through. |
