SUNSHINE SALAD 
2 grated carrots
1 can crushed pineapple
1 box orange Jello
2 tbsp. vinegar

Put Jello in dish with 1 cup hot water; mix well. Add pineapple, carrots and vinegar to Jello. Chill until set. Serve on lettuce leaf with a dollop of mayonnaise, if desired.
