NEW ORLEANS GREEN BEANS 
1/3 c. onion, chopped
1 green pepper, diced
2 tbsp. butter
1 tbsp. flour
1/2 tsp. salt
1 tsp. pepper
1 1/2 c. soft bread crumbs
1 c. cheddar cheese, grated
1 (16 oz.) can green beans, drained
1 (16 oz.) can whole tomatoes, peeled

In skillet brown onion and green pepper in butter. Mix flour with a little juice from tomatoes and add to onion and pepper. Add beans, tomatoes, salt and pepper.

Cook until slightly thickened, stir occasionally. Spoon tomato mixture into dish. Sprinkle with bread crumbs and cheese. Bake 10 minutes until cheese melts.
