BROILED FRENCH FRIES 
6 sm. baking potatoes (4 oz. each), scrubbed & cut into 8 wedges each
2 tbsp. butter
1/4 c. Parmesan cheese, grated
Salt (to taste)
Pepper (to taste)

Preheat broiler. Line broiler pan with aluminum foil. Drop potatoes into large pot of boiling water; partially cover. Return to boiling. Cook 4 minutes and drain. Toss in large bowl with butter. Arrange potato wedges in single layer on prepared pan. Sprinkle with half the cheese. Broil 5 to 10 minutes, or until deep golden brown. Turn potatoes. Sprinkle with rest of Parmesan cheese. Broil 5 to 8 minutes longer, or until golden brown. Season with salt and pepper. Serves 6.

Each serving: 136 calories. Exchanges: 1 1/4 bread and 1 fat.
