CHICKEN VINAIGRETTE 
2 c. carrots
1 (14 1/2 oz.) can stewed tomatoes
2 tbsp. red wine vinegar
1 tsp. dried thyme leaves
1 1/4 lbs. chicken, thighs or breasts
Bread crumbs

Brown chicken (rolled in bread crumbs) in tiny bit of oil or use Pam cooking spray. Add remaining ingredients and cover with lid. Cook for 20 minutes for breasts or 30 minutes for thighs. Serve over noodles or rice.
